Starters

Toshi' Sushis. 18 €
the sushis are prepared in the Japanese tradition by Toshikatsu TAKAHASHI our Japanese Chef.

Crusty pig trotter. 17 €
Deboned, the pig trotter is wrapped and cooked in a crusty sheet. It is served along with mashed celery.

Duo of duck goose liver from mister BOUCHOT. 19 €
One slice is marinated in Marc de Champagne, the other is with gingerbread.
The slices are served with some Bourbon vanilla perfumed toasts.

Lobster and melon. 23 €
Acushion of lobster with melon, drizzled in a Mr Poquet's honey.

 

The main courses

Tartelette of red mullet. 25 €
Gratinée with parmesan, the tartelette of red mullet is served with a bowl of Japanese rice and topped with a quenelle of tapenade.

Lobster from Canadien coasts. 29 €
Served in its shell, the lobster is accompanied by some black rice rizotto and mushrooms, with a strong jus.

Monkfish and dried wild boar ham. 23 €
And served with a black wild rice.

Scallops and goose liver.. 26 €
The scallops are topped with a slice of toasted goose liver and sprinckled .

Beef tournedos from Champagne-Ardennes. 25 €
Served with mushrooms, a crusty rosette of « charlottes » potatoes and a light Bitter Cocoa sauce.

Pigeon from Mister Canneaux. 23 €
The pigeon filets are served rare and the legs, crystallized, along with some Japanese cabbage.

Lamb fillet from the Ardennes Region (Mr Brenner). 24 €
Coated in mushrooms, the lamb fillet is served with chicon salad ans mashed celery.

French calf's sweetbreads. 29 €
Sauteed, the calf's sweetbreads is served with mushrooms from the woods and potatoes «  tournées » , creamed  « l'ancienne ».

The cheese matured by Monsieur Cornet are served on a bed of roquette drizzled in hazelnut vinaigrette.
